Like most moms out there, I’m trying to adjust into this back-to-school routine, but dealing with a new school and the crazy after school traffic this mom is very exhausted come 5 pm. Getting home is the least of my problems, I still have to help Naty with homework, projects, do household chores and think about what I’ll be making for dinner. And all us moms know that dinnertime is an extra chore for us with all the pots and pans that will need to be washed afterwards. A few days ago while stopping by at Walmart for some extra school supplies, I walked by the deli section and found Walmart offers busy moms Effortless Meals.

Effortless Meals are healthy, fresh options Walmart is proving families who are constantly on-the-go, but still want to have a filling dinner enough for the whole family. So if you like options, then this is the best place to grab some quick dinner that the whole family will love. Some of Walmart’s Effortless Meals like the Marketside Pizza meal which includes a 16” pepperoni or five cheese pizza, along with a 2 liter Coca-Cola product. I could not pass up on the Marketside Rotisserie Chicken Meal which included a fully cooked 29 oz chicken, 2 pound side of either potato salad, macaroni salad or Cole Slaw, and the 2 liter Coca-Cola to wash it all down.

I figured the rotisserie chicken would be best for us because I can do so much with the leftovers. Chicken all week! Here, I’ll give you some easy options you could use to make tomorrow night’s dinner using the leftover chicken: Chicken enchiladas, chicken tortilla soup, chicken taquitos, chicken salad sandwiches, or add it to a creamy penne pasta.

Since I’m a pasta kinda gal, I’ll go ahead and share the recipe with you! Just in case you want to stop by after work or after picking up the kids from school, although it’d be best if you try to pick up the meal early as they run out fast…really fast! Creamy Chicken & Broccoli Penne Pasta 

Ingredients:

1 C.-Rotisserie Chicken Leftovers

1 Box Penne Pasta

2 tablespoons Butter

2 Garlic Cloves, minced

2 tablespoons flour

1 cube chicken bouillon or 1 cup chicken broth

1 Cup of Milk

2 teaspoons Dry Parsley

1/2 Cup Grated Parmesan Cheese

Salt and Pepper to taste

Directions:

Cook pasta according to directions on box.

In a medium saucepan melt butter, add garlic and cook over medium heat for 1 minute.

Add in flour, cook for another minute. Stir.

Add milk and chicken bouillon/broth. Stir constantly until sauce boils and thickens.

Add chicken, broccoli and Parmesan cheese. Top with parsley, salt and pepper to your taste.
