Spring may still be in season, but down here in Texas the summer heat is what rules most of the year and although I would love to have cooler temperatures, I know outdoor grilling wouldn’t be the same without a little Texas heat. During summer, weekends are made for grilling and moving the party outside. Whether it be in our backyard, at the beach, or at the park and whatever may be the occasion; family reunions, birthday parties or just the urge to fire up that grill and cook the perfect bbq ribs! Whichever your reason may be, Aidells® products are sure to be a hit at your next outdoor grilling get-togethers.
I enjoy grilling with family and friends, but this usually means preparing a ton of food to feed the hungry crowd while the fajitas and ribs are done. And although chips and guac/salsa are great, they usually run out quickly… can you blame ’em, love chips with dips! I quickly realized I needed to serve something a bit more filling, that wouldn’t keep me too long in the kitchen.
Since I get most of my groceries from H-E-B I decided to try out Aidells® meatballs– which are fully cooked, just heat and these babies are ready to eat. Their unique flavor sets them apart from others, even from my own homemade meatballs! Each flavor is authentic with bold and unique flavor combinations. My favorite is the Caramelized Onion meatballs, perfect for making Mexican Meatball Subs; its smokey flavor makes it the perfect pair for outdoor grilling get-togethers.

Mexican Meatball Subs
Ingredients:
4 Sub Rolls, halved and split open
3 Avocados (Or pre-made guac)
1/2 Medium Red Onion (half diced, half sliced)
1 Jalapeño, minced
2 Tablespoons of finely chopped cilantro
Juice of 1 lime
4 Grape tomatoes, sliced
Aidells® Caramelized Onion Meatballs
1/2 cup Crumbled Cotija Cheese
Pickled jalapeños and cilantro leaves for garnish (optional)
Directions:
To make the guacamole: In a bowl, use a fork to mash the avocado, squeeze in the lime juice. Stir in the diced red onion, jalapeño, and cilantro. Season with salt and pepper then set aside.
Halve and split the subs. I wanted my subs a bit smaller, so I cut the end off. This is optional of course. Toast subs until golden, I like mine with a little crunch. Then spread about 2 tablespoons of guac on both top and bottom of each sub.
While the subs are toasting, heat Aidells® Caramelized Onion meatballs either in the microwave or stove top.
Fill each sub with 3-4 meatballs. Add in sliced red onion, tomatoes, pickled jalapeños, cilantro then sprinkle Cotija cheese. Serve and enjoy!
