Every Saturday my mom, Naty and I go to one of Houston’s most popular taquerias for breakfast…or at least we try to go every Saturday before 8am to avoid the long lines. One of my favorite items to get in my flour tortilla taco is machaca con huevo with some refried beans spread on the tortilla. Machaca is dried meat, somewhat like jerky. A family friend in Mexico sends us homemade machaca and we are so happy when it arrives because nothing compares to the authentic homemade flavor.
So on weekends when we can’t make it to the taqueria we prepare a delicious homemade machaca con huevo breakfast, a traditional dish in northern Mexico and in Texas. This dish served with some traditional refried beans, a bit of queso fresco and some homemade corn tortillas, will give you the energy you need to start your day.
I like to keep my Mexican food as authentic as possible, in order to give my daughter the same experiences and traditions I grew up with. One way is serving our dishes with the best tasting beans (since most of our dishes include beans) like BUSH’S Cocina Latina™ beans, which I found the new flavors in Walmart’s Hispanic Foods section. When BUSH’S Cocina Latina™ first came out a couple of years ago, I didn’t think they could beat the authentic home cooked flavor they already had with their Pinto Beans but when I tried the Traditional Refried Beans, it was like reminiscing my grandmother’s recipes. As you know beans take a few hours to cook, my grandmother prepared homemade beans every single day along with flour tortillas – have you ever had a warm flour torilla with just a spread of refried beans? DELICIOUS!
So of course now that I am aware of the new BUSH’S Cocina Latina™ flavors including Frijoles Charros Machacados, Frijoles Negros, and even Frijoles Cubanos (which I am curious to try!) I made sure to stock up on a few for the week and am very excited to create authentic recipes that my family will enjoy.
I hope you try this simple yet delicious recipe whenever you have cravings for a tasty mexican breakfast, and maybe something new and different for your familia. You will need the following ingredients…
Ingredients
6 eggs
5 oz. of shredded machaca
2 roma tomatoes, diced
1/4 onion, diced
2 serrano peppers, diced
1 can of BUSH’S Cocina Latina™ Traditional Refried Beans
2 tbsp vegetable oil
Instructions
Heat the 2 tbsp of vegetable oil in a skillet over medium heat. Add in machaca and onion, cook until onion becomes translucent.
Add in serrano peppers and diced tomato, cook for 5 minutes.
Add in eggs, season with salt. Cook until done.
In a separate skillet heat BUSH’S Cocina Latina™ Refried Beans.
Serve with warm tortillas and enjoy!
