Summer is now right around the corner, do you have any plans yet? Last month I began to plan out our summer vacation. I really want to get away somewhere on a beach, it’s just such a relaxing place and like they say “En el mar la vida es mas sabrosa…” Which means life is so much better by the sea.
I’ve decided to start making changes in the way I eat because I want to feel and be healthy, not just this summer but all year long. I have always heard how great Weight Watchers® is at helping others make the change, but now I am actually seeing the results myself. For the past month, I’ve been preparing delicious recipes and following tips from their Facebook WW Market, it’s almost hard to believe some of the recipes are actually healthy enough to eat. I love programs where I can make healthy changes without giving up the type of food I enjoy because y’all I have a huge sweet tooth! One item that always gets me in trouble is ice cream. I used the Weight Watchers® Cream Cheese to prepare these mini key lime cheesecakes but they also offer Shredded Cheese Blends and Cheese Slices when craving quesadillas or grilled cheese sandwiches.
Guilt-Free Key Lime Cheesecakes
1 (8oz) Weight Watchers® Fat-Free Cream Cheese
juice of 3 limes
3 tbsp sugar
1 (8oz) tub of whipped topping
2 graham crackers, crumbs
1/2 stick melted butter
In a bowl, mix fresh lime juice, softened cream cheese, and sugar with hand mixer until well blended.
Fold in whipped topping until mixed in. Set aside.
In another bowl, mix graham cracker crumbs along with melted butter.
Line your muffin pan and place a small amount of the graham cracker crumb mixture into each one, press and fill with cheesecake mixture. Refrigerate for 1 hour. Remove from fridge and remove liners, top with whipped topping and garnish with a slice of lime.
Serve and enjoy!
